Tomato & Red Onion Salad

Serves 6-8

Ingredients:
  • 1 medium red onion, sliced 1⁄4 cup sugar
  • 1⁄2 cup cider vinegar
  • 3⁄4 teaspoon salt
  • 3⁄4 teaspoon pepper
  • 8 cups tomatoes (about 3 lbs.), cut up

Directions:

In medium bowl, combine 4 cups ice cold water and 2 teaspoons salt. Stir to dissolve salt. Add onion slices and stir gently to separate rings. Let stand 20 minutes; drain. For dressing, in a small bowl whisk together, sugar, vinegar, salt and pepper. In extra bowl combine onions and tomatoes. Add dressing and gently toss to coat. Let stand about 5 minutes.
