- 2 egg whites
- ¾ cup sugar
- ¼ teaspoon salt
- 1 teaspoon vanilla
- 11 oz. chocolate baking chips (butterscotch, lemon, or your favorite may be used)
Preheat oven to 375 degrees. Beat egg whites with salt and vanilla until stiff.
Add sugar, one tablespoon at a time, continuing to beat. Fold in chips. Drop on parchment-lined cookie sheet, about a teaspoon to a cookie. They do not spread much so it can be placed closely together.
Turn oven off, put cookies in and close the door. Don’t peek until morning! (Do not double recipe, the texture will suffer.)
